Ingredients
  

  • 4 slices Brioche Bread 40g each, cut diagonally
  • 280 g Egg Mixture Pre-made or homemade custard (eggs + milk)
  • 90 g Mixed Berry Compote Homemade or store-bought
  • 40 g Strawberries Fresh, halved
  • 20 g Raspberries Fresh
  • 20 g Blueberries Fresh
  • 100 g Mascarpone Cheese Soft and creamy
  • 8 g Macadamia Nuts Lightly toasted
  • 40 g Toffee Sauce For drizzling
  • 8 ml Corn Oil Or neutral oil for frying
  • 8 g Fresh Mint Leaves Julienned for garnish

Instructions
 

  • Slice the brioche into 4 thick slabs (40g each), cut diagonally. Place in a shallow dish and drizzle with 280g of egg mix (or a homemade combo of 3 eggs, 100ml milk, vanilla extract, and a pinch of cinnamon). Refrigerate for 2 hours to allow the bread to absorb the mixture for a moist, tasty center.
  • Heat a non-stick or sauté pan over medium heat and add 8ml of corn oil. Lay the soaked brioche slices in the pan and cook each side for 2-3 minutes or until golden brown, creating a caramelized outer shell.
  • Preheat the oven to 170°C (340°F). After flipping the slices in the pan, transfer the entire pan to the oven. Bake for 5–7 minutes to caramelize and cook through without burning.
  • Plate with flair—2 slices per dish. Spread or dollop 50g of mascarpone cheese on each serving, followed by 45g of mixed berry compote. Top with fresh strawberries, raspberries, and blueberries. Drizzle 20g of toffee sauce per plate, sprinkle 4g of toasted macadamia nuts, and garnish with fresh mint leaves cut into matchstick-size lengths.
