Ingredients
  

  • 1/2 cup stick Butter Melted
  • 1 cup All-purpose flour Can substitute with gluten-free blend
  • 1 tsp Salt Adjust to taste
  • 1 tsp Baking powder
  • 3 large Eggs
  • 1 cup Milk Preferably whole or 2%
  • 20 oz Frozen chopped spinach Thawed and squeezed dry, two 10 oz packages
  • 4 cups Shredded Monterey Jack cheese 16 oz, freshly shredded if possible

Instructions
 

  • Preheat the oven to 350°F (175°C).

  • Melt 1/2 cup butter and pour into a 13x9-inch baking dish, tilting to coat evenly.

  • In a medium bowl, combine 1 cup flour, 1 tsp salt, and 1 tsp baking powder.

  • In a large bowl, whisk 3 large eggs and 1 cup milk until smooth. Add the dry ingredients and stir until just blended.

  • Fold in 20 oz thawed and squeezed-dry spinach and 4 cups shredded Monterey Jack cheese.

  • Pour the mixture into the prepared baking dish. Bake, uncovered, for 30–35 minutes or until a knife inserted near the center comes out clean.

  • Cool for 5 minutes, then cut into 36 small squares. Serve immediately or freeze for later.

  • Storage: Store leftovers in an airtight container in the fridge for up to 3 days. Reheat at 350°F for 5–7 minutes. Freeze cooled squares in a freezer-safe bag for up to 3 months; thaw in the fridge overnight before reheating.
